Ingredients
– 4 boneless, skinless chicken breasts
– 1 cup figs, dried or fresh
– 1/2 cup balsamic vinegar
– 2 tablespoons olive oil
– 2 tablespoons honey
– 4 cloves garlic, minced
– 1 teaspoon fresh rosemary, chopped
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon red pepper flakes (optional)
– Fresh thyme for garnish (optional)
Instructions
Creating Balsamic Fig Chicken may sound complex, but it’s quite simple if you follow these steps:
1. Prep the Chicken: Start by trimming any excess fat from the chicken breasts. Pat them dry with paper towels and season with salt, pepper, and red pepper flakes if using.
2. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
3. Sear the Chicken: Add the chicken breasts to the skillet. Sear for about 4-5 minutes on each side, until golden and cooked through. Remove from the skillet and set aside.
4. Make the Sauce: In the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
5. Add Figs and Balsamic: Pour in the balsamic vinegar and honey, scraping up any browned bits from the bottom of the pan. Add the figs and rosemary.
6. Simmer: Allow the sauce to simmer for 5-7 minutes, reducing slightly until it thickens.
7. Return Chicken: Place the seared chicken back into the skillet, spooning the sauce over each piece to coat.
8. Cook Together: Let the chicken simmer in the sauce for an additional 5 minutes to absorb the flavors.
9. Serve: Remove from heat and garnish with fresh thyme if desired.
10. Enjoy: Serve the chicken hot with a generous helping of the fig-balsamic sauce drizzled on top.
