1. Prepare the Cod: Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
2. Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering.
3. Sear the Cod: Carefully place the cod fillets in the skillet. Cook for about 4-5 minutes on each side, or until golden and cooked through. Remove the fillets from the pan and set aside.
